Loaded Potato Skins

List of Ingredients :
- 2 med baking potatoes

30g half fat cheddar cheese, grated

2 spring onions, finely chopped

2 cherry tomatoes, chopped

Salt and ground black pepper
Cooking Instructions :
1. Scrub the potatoes and either cook them in the microwave or bake in a
preheated oven at 200C, 400F, mark 6 for about an hour until tender.
2. Slice potatoes in half length ways, and with small spoon, scoop out the flesh,
just leaving a thin layer of potato inside outer skin.
3. Mix grated cheddar with the chopped spring onions and tomatoes and season
to taste with the salt and pepper. Pile mixture into hollowed out skins.
4. Pop loaded skins under preheated hot grill for about 5 mins until bubbling
and golden brown on top.
Serve immediately. Nice with extra mixed green leaf salad.
